Old-Fashioned Muffins
Ingredients
- 2 cups all purpose flour
- 1/2 cup sugar
- 2 tsp. double-acting baking powder
- 1 tsp. Cook's Pure Vanilla Powder
- 1 tsp. salt
- 1/4 cup butter or margarine, softened
- 1/4 cup shortening
- 1/2 cup milk
- 2 eggs, beaten
Directions
- Preheat oven to 400ºF, grease twelve 2 1/2" muffin-pan cups, set aside
- In medium bowl combine dry ingredients: mix well
- Using pastry blender or 2 knives scissor-fashion, cut in butter or margarine and shortening until mixture resembles fine crumbs
- Combine milk and eggs
- Add to dry ingredients all at once, stirring just until moistened
- Do Not Overmix
- Spoon batter into prepared cups, filling each 3/4 full
- Bake 20-25 minutes, or until golden brown
- Immediately remove from pan to cooling rack: Serve warm
- Makes 1 dozen, about 200 calories each
- Optional: Add 1/2 cup blueberries, dates, or nuts
