Ingredients

  • 2 cups all purpose flour
  • 1/2 cup sugar
  • 2 tsp. double-acting baking powder
  • 1 tsp. Cook's Pure Vanilla Powder
  • 1 tsp. salt
  • 1/4 cup butter or margarine, softened
  • 1/4 cup shortening
  • 1/2 cup milk
  • 2 eggs, beaten

Directions

  1. Preheat oven to  400ºF, grease twelve 2 1/2" muffin-pan cups, set aside
  2. In medium bowl combine dry ingredients: mix well
  3. Using pastry blender or 2 knives scissor-fashion, cut in butter or margarine and shortening until mixture resembles fine crumbs
  4. Combine milk and eggs
  5. Add to dry ingredients all at once, stirring just until moistened
  6. Do Not Overmix
  7. Spoon batter into prepared cups, filling each 3/4 full
  8. Bake 20-25 minutes, or until golden brown
  9. Immediately remove from pan to cooling rack: Serve warm
  10. Makes 1 dozen, about 200 calories each
  11. Optional: Add 1/2 cup blueberries, dates, or nuts
