Frozen Chocolate Cookie Cups
Ingredients
- 1 cup butter
- 2 cups sifted powdered sugar
- 4 oz. unsweetened chocolate, melted
- 4 eggs
- ¾ tsp. Cook’s Pure Peppermint Extract
- 2 tsp. Cook’s Choice Pure Vanilla Extract
- 1 cup vanilla wafer crumbs (1/2 of a 7 oz. Box)
- Whipped cream
- Maraschino cherries
Directions
1. Using electric mixer, beat together butter and powdered sugar until light and fluffy
2. Add melted chocolate and continue beating
3. Add eggs, Cook’s Pure Peppermint Extract, and Cook’s Choice Pure Vanilla Extract
4. Sprinkle about half of the cookie crumbs in 18 cupcake liners
5. Spoon in chocolate
6. Sprinkle remaining crumbs over top
7. Freeze until firm
8. Serve with whipped cream, topped with a cherry
