Sadie's Secret Peppermint Mocha Cupcake Recipe

Ingredients

Cupcakes

combine following wet ingredients in a mixing bowl:

3/4 cup buttermilk

3/4 cup warm water

2 eggs

1/4 cup canola oil

1 tsp Cook's Pure Choice Vanilla Extract

 

wisk together following dry ingredients and then mix in with the wet ingredients:

1 1/2 cup all purpose flour

1 1/2 cup sugar

1/2 cup cocoa powder

2 tsp espresso powder (optional)

1 1/2 tsp baking soda

3/4 tsp baking powder

3/4 tsp salt

Directions

pour 3/4 full in cupcake liners and bake at 350 degrees for 18 minutes

while cupcakes are cooling make the frosting.

peppermint frosting:

1 stick butter

1/2 block (4 oz) cream cheese

2 tbsp milk

4 cups powdered sugar

1 1/2 tsp Cook's Pure Peppermint Extract or Cook's Organic Peppermint Extract

 

Cream together the butter, cream cheese, and milk. add the extract and blend. add the powdered sugar 1 cup at a time. blend together until creamy (if too creamy add more powered sugar, if too thick add more milk)

After cupcakes cool top them with peppermint frosting and finish off with some crushed peppermint candies or a junior mint candy.
