Chocolate Cottage Cheese Pancakes
Ingredients
1 ¼ cups all-purpose flour
1/3 cup of sugar
1 tsp baking soda
½ tsp salt
1 cup sour cream (I use fat free or low fat)
1 cup cottage cheese (I also use fat free or low fat)
2 eggs
Strawberries & Blueberries topping
(You can also use a drizzle of Balsamic Glaze over the berries)
2 tsp(s) of Cooks Pure Chocolate Extract
Butter for Griddle
Directions
- Whisk together the flour, sugar, baking soda and salt in a medium size bowl. In a separate large bowl, stir together sour cream, cottage cheese, eggs and Cooks Pure Chocolate Extract. Add the flour mixture to the large bowl. Stir in together.
- Heat Griddle over medium heat and butter lightly.
- Spoon level ¼ cup batter onto griddle for each pancake; spread to diameter of 4 inches. Cook until light brown on bottom and bubbles begin to form on top, 3 to 4 minutes. Turn over with wide spatula. Cook until set in the center, about 2 minutes. Keep warm in over until ready to serve.
- Garnish with whatever you desire. In this recipe, I used the berries and balsamic glaze.
