Chocolate Mayo Cake
Ingredients
Cake:
- 2 cups flour
- 1 cup sugar
- 1 1/2 tsp. baking powder
- 1 tsp. Cook’s Pure Chocolate Extract or Cook’s Organic Chocolate Extract
- 1 1/2 tsp. baking soda
- 1 cup water
- 1 cup mayonnaise
- 2 tsp. Cook’s Choice Pure Vanilla Extract or Cook’s Organic Pure Bourbon Vanilla Extract
Vanilla Sauce Topping:
- 1/2 cup sugar
- 2 Tbls. cornstarch
- 1/4 tsp. salt
- 2 cups boiling water
- 4 Tbls. butter
- 2 tsp. Cook’s Choice Pure Vanilla Extract (Or try Cook’s Pure Cookie Vanilla Extract to add more flavor!)
Directions
- Stir together dry ingredients for the cake
- Add water, mayonnaise, Cook’s Pure Chocolate Extract and Cook’s Choice Pure Vanilla Extract in that order, mixing well after each
- Bake at 350ºF in two 8-inch pans for 30-35 minutes, let cool
- Cook all ingredients for vanilla sauce, boil until clear
- Remove cake from pans
- Drizzle vanilla sauce over one cake
- Place second cake on top
- Drizzle the rest of the vanilla sauce over the cake
