Chocolate Shortbread

  1. Preheat oven to 300ºF
  2. In the container of a food processor fitted with a metal chopping
  3. Process for 10 seconds to sift
  4. Distribute butter over the mixture and pulse 10-15 times, or until
  5. Add Cook’s Pure Cookie Vanilla Extract, process with long pulses
  6. On a lightly floured surface, using a lightly floured rolling pin, roll out
  7. Use lightly floured cookie cutters to cut shapes from the dough,
  8. Continue cutting and rolling dough, rerolling scraps as necessary
  9. Bake for 20-25 minutes, or until firm but not browned
  10. Cool the cookies on the pan set on a wire rack for 10 minutes
  11. Transfer cookies to wire rack and cool completely before storing
