Chocolate Shortbread
Ingredients
- 1 cup flour
- 1/3 cup unsweetened cocoa powder
- 1/2 cup + 3 Tbls. powdered sugar
- 1/2 cup (1 stick) butter, cut into tablespoons
- 2 tsp. Cook’s Pure Cookie Vanilla Extract
Directions
- Preheat oven to 300ºF
- In the container of a food processor fitted with a metal chopping
- Process for 10 seconds to sift
- Distribute butter over the mixture and pulse 10-15 times, or until
- Add Cook’s Pure Cookie Vanilla Extract, process with long pulses
- On a lightly floured surface, using a lightly floured rolling pin, roll out
- Use lightly floured cookie cutters to cut shapes from the dough,
- Continue cutting and rolling dough, rerolling scraps as necessary
- Bake for 20-25 minutes, or until firm but not browned
- Cool the cookies on the pan set on a wire rack for 10 minutes
- Transfer cookies to wire rack and cool completely before storing
