Lemon Honey Cookies
Ingredients
For the Cookies:
1/2 Cup Unsalted Butter
3/4 Cup White Sugar
1/4 Cup Honey
1 Tablespoon Lemon Juice
2 Teaspoons Pure Lemon Extract
Zest of 1 Lemon
2 Large Eggs
2 Cups Flour
1 Teaspoon Baking Soda
1 Teaspoon Salt
For the Glaze:
1 Teaspoon Lemon Extract
1 Tablespoon Lemon Juice
1 Tablespoon Honey
1/2 Cup Powdered Sugar
Directions
- In the bowl of an electric mixer, cream together the butter, sugar, honey, lemon juice, lemon extract, and lemon zest.
- Mix in the eggs, one at a time, scraping the bowl after each addition.
- In a separate bowl, combine the flour, baking soda, and salt.
- Add the flour mixture to the butter mixture and mix until just combined. Refrigerate for 2 Hours.
- Preheat the oven to 350 degrees.
- In a bowl, mix together all of the ingredients for the glaze until the glaze is smooth. Set aside.
- Roll cookie dough into 1.25″ balls and place on a cookie sheet lined with parchment paper.
- Bake cookies for 8-12 minutes or until just cooked through.
- Let cool on a wire rack.
- Once the cookies are cool, either dip the tops in the glaze or drizzle the glaze over the top.
