Simple Almond Cake (Gluten-Free)
Ingredients
6 Eggs, Separated
1 Cup plus 2 Tbsp Sugar
1 Tsp Pure Almond Extract
1 Tsp Cook’s Pure Vanilla Extract Double Strength
Pinch of Salt
2.25 Almond Flour
Optional Glaze:
2 Tbsp Milk
2 Tbsp Cook’s Pure Almond Powder

Directions
- Preheat the oven to 350 degrees Fahrenheit.
- Butter and line with parchment paper a 9″ cake pan at least 2″ tall.
- In a large bowl using an electric hand mixer, mix the egg yolks, 1 cup of sugar, and two extracts.
- In a second large bowl use the electric hand mixer (but rinse the beaters so that no yolks remain on the beaters), whip the egg whites, salt, and remaining sugar until medium peaks form.
- Gently fold 1/3 of the egg whites into the egg yolks until just combined and the mixture is more pale yellow.
- Fold in the rest of the egg whites until just combined.
- Spoon on top 1/2 of the almond flour and mix with a rubber spatula. No need to fully incorporate at this step.
- Spoon the rest of the almond flour into the batter and fold it into the batter until the mixture is homogenous.
- Pour the batter into the prepared pan and bake on the middle rack of the oven for 30-35 minutes or until the top is golden brown and the cake slightly comes away from the side of the pan.
- Let cool for 5 minutes on a wire rack in the pan. Then run a knife around the edge and remove the cake from the pan.
