Ingredients

  • 3 eggs
  • 1 cup sugar
  • 1/3 cup vegetable oil
  • 1 teaspoon lemon juice
  • 1/2 teaspoon Cook's Pure Almond Extract
  • grated rind of 1 lemon
  • 3 cups flour
  • 1/2 cup coarsley cut blanched almonds
  • 1/4 teaspoon salt
  • 3 teaspoons baking powder

Directions

  1. Beat eggs with sugar and stir in vegetable oil, lemon juice, Cook's Pure Almond Extract, and grated lemon rind.
  2. Sift flour with baking powder and salt.
  3. Add flour gradually with almonds, to make a firm dough.
  4. Knead dough lightly and form into loaves 3 inches wide and 1 inch thick.
  5. Bake on oiled baking sheet at 350 degrees for 45 minutes.
  6. Slice loaves while still warm 1/2 inch thick and return to oven to crisp and brown on both sides.
