Almond Slices
Ingredients
- 3 eggs
- 1 cup sugar
- 1/3 cup vegetable oil
- 1 teaspoon lemon juice
- 1/2 teaspoon Cook's Pure Almond Extract
- grated rind of 1 lemon
- 3 cups flour
- 1/2 cup coarsley cut blanched almonds
- 1/4 teaspoon salt
- 3 teaspoons baking powder
Directions
- Beat eggs with sugar and stir in vegetable oil, lemon juice, Cook's Pure Almond Extract, and grated lemon rind.
- Sift flour with baking powder and salt.
- Add flour gradually with almonds, to make a firm dough.
- Knead dough lightly and form into loaves 3 inches wide and 1 inch thick.
- Bake on oiled baking sheet at 350 degrees for 45 minutes.
- Slice loaves while still warm 1/2 inch thick and return to oven to crisp and brown on both sides.
