Lemon Honey Cookies

Lemon Honey Cookies

Servings: 48 Prep: 15 minutes, plus 2 hours chill time Cook Time: 8-12 minutes

Ingredients

For the Cookies:

1/2 Cup Unsalted Butter

3/4 Cup White Sugar

1/4 Cup Honey

1 Tablespoon Lemon Juice

2 Teaspoons Pure Lemon Extract

Zest of 1 Lemon

2 Large Eggs

2 Cups Flour

1 Teaspoon Baking Soda

1 Teaspoon Salt

For the Glaze:

1 Teaspoon Lemon Extract

1 Tablespoon Lemon Juice

1 Tablespoon Honey

1/2 Cup Powdered Sugar

Directions
  1. In the bowl of an electric mixer, cream together the butter, sugar, honey, lemon juice, lemon extract, and lemon zest.
  2. Mix in the eggs, one at a time, scraping the bowl after each addition.
  3. In a separate bowl, combine the flour, baking soda, and salt.
  4. Add the flour mixture to the butter mixture and mix until just combined. Refrigerate for 2 Hours.
  5. Preheat the oven to 350 degrees.
  6. In a bowl, mix together all of the ingredients for the glaze until the glaze is smooth. Set aside.
  7. Roll cookie dough into 1.25" balls and place on a cookie sheet lined with parchment paper.
  8. Bake cookies for 8-12 minutes or until just cooked through.
  9. Let cool on a wire rack.
  10. Once the cookies are cool, either dip the tops in the glaze or drizzle the glaze over the top.
