Lime Snowball Cookies
1.5 Cups All Purpose Flour
1/2 Cup Cornstarch
1 Cup Unsalted butter, room temperature
1/2 Cup Powdered Sugar
2 Tsp Pure Lime Extract
2 Tbsp Fresh Lime Juice
1 Tsp Lime Zest
Extra Powdered Sugar for Finishing
Preheat oven to 350 degrees Fahrenheit. Line two baking sheets with parchment paper.
In a small bowl, mix together the flour and cornstarch. In a separate bowl, cream together the butter and powdered sugar and then mix in the lime juice, lime extract, and lime zest. Add the flour mixture into the butter and sugar mixture and mix until combined.
Roll dough into 1" balls and then bake until the cookies are golden brown on top and bottom, about 23 minutes. Let the cookies cool until warm on drying racks and then roll the cookies in powdered sugar. Return to cooling racks to let the cookies finish cooling.
Makes about 3 dozen.
