No-Bake Key Lime Pie

Servings: 10-12 Prep: 30 minutes Cook Time: 8 hours of chilling


10 Oz Shortbread cookies

1/4 Cup Butter, melted

1 Tbsp Cook's Organic Pure Vanilla Powder

14 Oz Sweetened condensed milk

16 Oz Cream cheese, room temperature

1 Tsp Cook's Pure Lime Extract

2/3 Cup Key Lime Juice

1 Tbsp Lime Zest

1/2 Cup Sour Cream

1 Tbsp Sugar 

  1. In a food processor, pulse together the cookies, vanilla powder, and melted butter.
  2. Press the cookie mixture into a pie dish and then freeze.
  3. In a large bowl, mix together the cream cheese, sweetened condensed milk, lime juice, lime zest, and lime extract with an electric mixer.
  4. In a small bowl, mix together the sour cream and sugar. Refrigerate and set aside.
  5. Pour the cream cheese mixture into the crust and refrigerate for at least 4 hours.
  6. Smooth the sour cream mixture on top of the pie and then refrigerate for another 4 hours. Top with more lime zest, if desired.
